The Caesar is not Italian: Caesar Cardini invented it in Tijuana in the 1920s, out of what was left in his kitchen over a long weekend. It works by contrast: the toasted bread crunches among the leaves, the parmesan brings the salt, the dressing the creaminess and the acidity, and the chicken makes it a meal rather than a starter.
