Girona entrecôte

The beef comes from Girona, the province between Barcelona and the French border, whose Pyrenean valleys are cattle country. An entrecôte is the cut from between the ribs, the one with the fat running through it rather than round the edge, which is why it takes a hard fire without drying out. It comes with Padrón peppers and homemade chips.
