Slices of Iberian ham laid out on a round wooden board, on a marble table.

Homemade tapas

It comes from the Iberian pig and is cured for two to four years. It is sliced thin and eaten at room temperature: cold, the fat does not melt and the flavour never comes through.

It is what we sold when we opened in 1929, when this was a charcuterie with a bar.
